As we head out of summer there is no better recipe to head into cozy fall than a casserole dish. This family recipe has been made by my mother for family holidays and is definitely a favorite!
Servings: 6
Ingredients
2-3 yellow squash
1 medium yellow onion
12 oz evaporated milk
4 Tbsp melted butter
2 eggs, beaten
1 cup shredded cheddar cheese
1 tsp salt
2 tsp pepper
2 cup crushed saltine crackers
Directions
Preheat oven to 350
Melt 2 Tbsp butter over medium low heat. Add squash and onion, cook until soft
To a bowl, add eggs and lightly whisk. Add cheese and evaporated milk and mix well.
Add cooked squash and onion to egg mixture.
Melt remaining 2 Tbsp butter and add to casserole mixture
Spray casserole dish with cooking spray and pour casserole mixture into dish
Top with crushed saltine crackers
Bake for 40 minutes
