Squash Casserole

As we head out of summer there is no better recipe to head into cozy fall than a casserole dish. This family recipe has been made by my mother for family holidays and is definitely a favorite!


Servings: 6

Ingredients

  • 2-3 yellow squash

  • 1 medium yellow onion

  • 12 oz evaporated milk

  • 4 Tbsp melted butter

  • 2 eggs, beaten

  • 1 cup shredded cheddar cheese

  • 1 tsp salt

  • 2 tsp pepper

  • 2 cup crushed saltine crackers

Directions

  1. Preheat oven to 350

  2. Melt 2 Tbsp butter over medium low heat. Add squash and onion, cook until soft

  3. To a bowl, add eggs and lightly whisk. Add cheese and evaporated milk and mix well.

  4. Add cooked squash and onion to egg mixture.

  5. Melt remaining 2 Tbsp butter and add to casserole mixture

  6. Spray casserole dish with cooking spray and pour casserole mixture into dish

  7. Top with crushed saltine crackers

  8. Bake for 40 minutes
